4 C Cassava flour
1 1/2 C White Rice flour
2/3 C Buckwheat flour
2/3 C Sorghum flour
1/4 C Chia Seeds
2 Tbsp Xanthan Gum
Mix all ingredients thoroughly. Store in an air tight container. Use in place of "regular flour" in a 1:1 ratio.
Note: This mix can be altered to your taste (and what you have in your pantry). Use the flours you like the best. Chia seeds are optional (they do "show" in your dough, so leave out if you don't want black specks)
