1 spaghetti squash
3-5 strips of bacon
3/4 C goat cheese
2 Tbsp flour (I used sorghum)
1 1/2 tsp Ener-G egg replacer
2 Tbsp warm water
salt
pepper
olive oil
Cook spaghetti squash until tender. Scrape out insides, set aside. Cook bacon, cool and crumble. Mix 2 cups of cooked squash (rest can be stored in the refrigerator for use in later dishes), bacon, cheese, flour, egg replacer and water together in a large bowl. Add some salt and pepper to taste. Cover bottom of a pan with about 1/4 in of olive oil. Heat oil. When oil is ready, roll and pat squash mixture into small ping-pong sized balls, then flatten into patties. Lay the patties into the oil and cook until golden brown on each side.
These are a great "base" for adding lots of different ingredients. Carrots, onions, peppers, shredded chicken, etc. You can make the patties bigger and serve this as the "main course" or keep them small to have as an appetizer or side dish. Be sure to keep them fairly thin, when flattened. If they are took thick, the middle won't cook.

UPDATE: We made these again tonight and added some shredded chicken to the mix. Definitely creates a full "meal" and she still LOVED them!!
