1 large sweet potato (cooked, peeled, mashed)
2 ripe bananas
1 1/2 C flour (your choice. I used glutino all purpose flour)
3/4 C sugar
1/2 C applesauce (sweetened or unsweetened)
1/4 C Enjoy Life chocolate chunks
1 Tbsp cinnamon
1 tsp salt
Preheat oven to 325 degrees. Mash sweet potato, bananas, applesauce together in bowl. In a separate bowl, combine sugar, flour, cinnamon and salt. Slowly add the dry mixture to the sweet potato mixture. Fold in chocolate chunks. Spray a bundt pan with non-stick cooking spray (be careful because many of these have soy ingredients!) If you can't find a spray without soy, pour some olive oil on a paper towel and wipe the inside of the pan. Pour the batter into the pan and cook for 1 hour, or until inserted toothpick comes out clean.
This is another Lady H favorite! It isn't (too) bad for you either!
