1 C Pamela's Pancake and Waffle Mix
1.5 tsp Ener-G egg replacer
2 Tbsp warm water
3/4 C water
1 Tbsp oil (we used canola)
Mix all ingredients together. If batter is too thin, add a small amount of the pancake/waffle mix to thicken it up. If it is too think, add water (in tbsp increments) until mix thins out. FOR WAFFLES: pour batter in the center of the waffle maker and once it is 1/2-1/4 inch from the sides, stop and close waffle maker. FOR PANCAKES: Heat griddle to 375 degrees and pour batter, forming small circles on griddle. Once bubbles appear, flip the pancake over. Continue cooking until golden brown.
Note: I doubled the recipe. That made enough for all of us to have a waffle, with about half of a waffle left over.
